Healthy Banana Oat Choc Chip Muffins

Ingredients:
2 2/3 cups Super-fine Almond Flour GF (Bob’s Red Mill)
1/2 cup Old Fashioned Rolled Oats GF (Bob’s Red Mill)
1 cup Over-ripened Bananas (or 3 over-ripened bananas)
1/3 cup Honey or Maple Syrup
1 teaspoon Vanilla Extract
1 teaspoon Cinnamon
1 teaspoon Baking Soda
1/4 teaspoon Salt
1/4 cup Semi-sweet Chocolate Chips
About 1 Tablespoon extra Rolled Oats for topping
Coconut Oil or Cooking Spray for greasing muffin pan
Directions:
Preheat oven to 350 degrees F. Grease 12 count muffin pan with coconut oil or spray with cooking spray.
Using a mixer or electric hand beaters, combine bananas, honey (or maple syrup), eggs and vanilla extract and mix until smooth.
At a lower speed, add the dry ingredients: almond flour, rolled oats, cinnamon, baking soda and salt. Scrape down the sides as needed, making sure all ingredients are mixed well.
Using a spatula, fold in chocolate chips.
With an ice cream scoop of 1/3 measuring cup, scoop batter onto 12 count muffin pan, dividing evenly.
Sprinkle remaining rolled oats on top of each muffin.
Bake at 350* F for 20-25 minutes or until inserted toothpick comes out clean.
